raditional Preservation of Premium Whitefish
Harvested from the cold, nutrient-dense currents of the North Atlantic, our Haddock Fish Fillets (Melanogrammus aeglefinus) are masterfully preserved using time-tested Nordic curing techniques. Recognized for its premium quality, haddock is a highly sought-after whitefish valued for its subtle sweetness and tender muscle structure. By combining traditional salting and drying craftsmanship with strict modern food safety standards, these fillets are processed at the peak of freshness to lock in their natural characteristics and ensure a premium export product.
Two Versatile Processing Formats
- Wet Salted Haddock Fillets: These fillets are cured in a heavy brine and dry salt process, allowing the fish to absorb salt uniformly while retaining its natural moisture. The result is a heavy, pliable fillet that rehydrates beautifully, yielding a tender, plump, and juicy texture when prepared.
- Dried Salted Haddock Fillets (Klippfisk / Clipfish): Following the initial salting phase, these fillets are gradually and evenly dried under climate-controlled conditions. This extensive curing process concentrates the fish’s natural flavors into a deep, savory umami profile and creates a firm texture with an extraordinary ambient shelf-life.
Distinctive Texture and Flavor
Atlantic Haddock stands out for its refined culinary characteristics, offering a muscle structure that is slightly finer and more tender than traditional cod. Completely skinless and boneless, these fillets maintain their excellent structural integrity throughout the preparation process. When cooked, the lean white meat separates into brilliant, snow-white flakes that hold up beautifully, absorbing olive oils, light sauces, and regional spices perfectly without losing their signature delicate flavor.
